1/2 cup (1 stick) butter

4 cups rotisserie chicken meat, shredded

1 (15 ounce) bag frozen mixed vegetables

1 (11.36 ounce) package Cheddar bay biscuit mix

2 cups milk

1 (10.5 ounce) can cream of chicken soup

2 cups chicken stock

2 tablespoons fresh chopped parsley (optional)


Instructions

Heat your oven to 375 degrees F (190 degrees C). Place butter in a 9×13 inch baking dish and melt it in the oven.

Once the butter has melted, arrange the chicken in a single layer over it. Distribute the frozen vegetables evenly on top of the chicken.

In a bowl, mix the biscuit mix, the seasoning packet included with the mix, and milk until it’s well combined; then pour this mixture over the chicken and vegetables. Gently spread it to cover the surface evenly, but avoid stirring it into the layers below.

In another bowl, blend the soup and stock together until they form a smooth mixture. Gently pour this over the layer of biscuit mix, taking care not to mix the layers.

Bake everything in the oven, uncovered, until the top turns a deep golden brown and the center is just slightly wobbly, which should take about 45 minutes.

If you like, garnish with parsley after baking. Allow the dish to rest for 10 minutes before serving.
