1/4 cup powdered sugar
2 eggs, at room temperature
Zest of 2 medium lemons
Juice of 1 lemon
1 1/2 tsp vanilla extract
1/2 tsp almond extract
1 cup flour
Ingredients for the Icing:
1 cup powdered sugar
1 tsp vanilla extract
Juice and zest of 1 lemon
Instructions
Preheat your oven to 350°F and line an 8×8 baking dish with parchment paper.
Whisk together melted butter and sugars in a medium bowl.
Incorporate eggs, lemon zest, lemon juice, and extracts.
Gently fold in the flour until just combined and pour into the prepared baking dish.
Bake for 15-18 minutes, then cool before icing.
