Ingredients
  

  • 2 large boneless skinless chicken breasts diced
  • 8 skewers

Marinade

  • 1/2 tablespoon garlic powder
  • 2 teaspoons onion powder
  • Kosher salt
  • Freshly ground black pepper

Sauce

  • 1/2 cup apricot preserves
  • 2.5 tablespoons pure honey
  • 7 large garlic cloves finely chopped
  • 1.5 teaspoons ground ginger
  • 3 teaspoons soy sauce
  • 2 tablespoons apple cider vinegar
  • Kosher salt
  • Freshly ground black pepper

Instructions
 

  • Begin by marinating the chicken. Evenly sprinkle salt and pepper over the chicken.
  • Next, thread the chicken onto the skewers, using four pieces per skewer. (Soak wooden skewers for at least five minutes to prevent burning.)
  • Allow the chicken to marinate in the refrigerator for a minimum of two hours for best flavor.
  • When ready to cook, take the chicken out of the fridge and let it rest for five to ten minutes.
  • While the chicken is resting, prepare the sauce by combining all sauce ingredients in a small saucepan over medium-low heat. Stir until well mixed and cook for 2 to 3 minutes. Season with salt and pepper to taste.
  • Grill the chicken skewers for 2 to 3 minutes on each side, or until fully cooked.
  • Serve the skewers drizzled with the sauce.
