Coconut Flour Chocolate Chip Cookies

Ingredients
  

  • 1/2 cup Coconut Flour (60g)
  • 1/2 cup Brown Monk Fruit Sweetener (100g)
  • 1/2 cup Unsalted Butter (113g, softened)
  • 2 Medium Eggs
  • 1 tsp Vanilla Extract
  • 1/4 tsp Sea Salt
  • 1/2 cup Dark Chocolate Chips (90g, plus 1 tbsp for topping, optional)

Instructions
 

  • Preheat your oven to 350°F (177°C) and prepare a baking sheet with parchment paper.
  • In a large bowl, mix together the coconut flour, brown sweetener, softened butter, eggs, vanilla extract, and sea salt.
  • Use a hand mixer to blend the dough until smooth, then fold in the dark chocolate chips with a spatula.
  • Shape the dough into 15 small balls and place them on the baking sheet. Flatten each ball into a cookie shape.
  • Bake for 10-12 minutes until the edges turn slightly golden.
  • Let the cookies cool on the baking sheet for 20 minutes before transferring them to a wire rack to cool completely.

Notes

Feel free to add more chocolate chips on top for extra chocolate goodness!
