Ingredients
  

  • 6 cubanelle peppers washed
  • 1 lb ground turkey or a vegetarian alternative like crumbled tofu or lentils
  • 1 cup cooked rice
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 cup diced tomatoes canned or fresh
  • 1/2 cup shredded cheese optional for topping
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon cumin optional
  • Fresh parsley or cilantro for garnish

Instructions
 

Preheat the Oven:

  • Preheat your oven to 375°F (190°C) to ensure it's at the right temperature by the time you're ready to bake.

Prepare the Peppers:

  • Cut off the tops of the cubanelle peppers and remove the seeds and membranes. Set aside. Optionally, you can slice them lengthwise for easier filling.

Cook the Filling:

  • Heat olive oil in a skillet over medium heat. Add the chopped onions and garlic, sautéing until soft and fragrant.
  • Add the ground turkey (or vegetarian alternative) to the skillet. Cook until browned, breaking it apart with a spoon as it cooks.
  • Stir in the cooked rice, diced tomatoes, cumin, salt, and pepper. Cook for another 5 minutes, then remove from heat.

Fill the Peppers:

  • Spoon the filling into each pepper, packing it lightly until full.

Bake:

  • Place the filled peppers in a baking dish. Cover with aluminum foil and bake in the preheated oven for 25 minutes.
  • Remove the foil, sprinkle cheese on top of each pepper (if using), and bake for an additional 5 minutes or until the cheese is melted and slightly golden.

Serve:
