- 6 cubanelle peppers washed
- 1 lb ground turkey or a vegetarian alternative like crumbled tofu or lentils
- 1 cup cooked rice
- 1 onion finely chopped
- 2 cloves garlic minced
- 1 cup diced tomatoes canned or fresh
- 1/2 cup shredded cheese optional for topping
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon cumin optional
- Fresh parsley or cilantro for garnish
Cook the Filling:
Heat olive oil in a skillet over medium heat. Add the chopped onions and garlic, sautéing until soft and fragrant.
Add the ground turkey (or vegetarian alternative) to the skillet. Cook until browned, breaking it apart with a spoon as it cooks.
Stir in the cooked rice, diced tomatoes, cumin, salt, and pepper. Cook for another 5 minutes, then remove from heat.
Bake:
Place the filled peppers in a baking dish. Cover with aluminum foil and bake in the preheated oven for 25 minutes.
Remove the foil, sprinkle cheese on top of each pepper (if using), and bake for an additional 5 minutes or until the cheese is melted and slightly golden.
