  • 8 tbsp unsalted butter melted and slightly cooled
  • 1/2 cup sugar
  • 1/4 cup powdered sugar
  • 2 eggs at room temperature
  • Zest of 2 medium lemons
  • Juice of 1 lemon
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 cup flour

Ingredients for the Icing:

  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • Juice and zest of 1 lemon

Instructions
 

  • Preheat your oven to 350°F and line an 8x8 baking dish with parchment paper.
  • Whisk together melted butter and sugars in a medium bowl.
  • Incorporate eggs, lemon zest, lemon juice, and extracts.
  • Gently fold in the flour until just combined and pour into the prepared baking dish.
  • Bake for 15-18 minutes, then cool before icing.
