Ingredients
  

  • Olive oil: 1 Tbsp
  • Smoked turkey kielbasa sliced ¼ inch thick: 1 lb
  • Small onions diced: 2
  • Garlic minced: 2 cloves
  • Low-sodium chicken broth: 2 cups
  • Diced tomatoes 15 oz can: 1
  • Dry pasta: 8 oz
  • Whole milk: ½ cup
  • Black pepper: ½ tsp
  • Shredded cheddar cheese divided: ½ cup
  • Thinly sliced scallions for garnish: ⅓ cup

Instructions
 

Prepare the Ingredients:

  • Slice the kielbasa into ¼ inch thick pieces.
  • Dice the onions and mince the garlic cloves.
  • Measure out the chicken broth, diced tomatoes, dry pasta, whole milk, and black pepper.
  • Shred the cheddar cheese and thinly slice the scallions for garnish.

Cook the Kielbasa and Onions:

  • Heat 1 tablespoon of olive oil in a large, deep skillet over medium-high heat.
  • Once the oil is hot, add the sliced kielbasa and diced onions.
  • Cook for 6-8 minutes or until the kielbasa is browned and the onions are tender.

Add Garlic:

  • Add the minced garlic to the skillet and cook until fragrant, about 30 seconds.

Combine Broth and Tomatoes:

  • Pour in the 2 cups of low-sodium chicken broth and the can of diced tomatoes (with juice).
  • Stir to combine the ingredients.

Add Pasta and Milk:

  • Add the dry pasta, ½ cup of whole milk, and ½ teaspoon of black pepper to the skillet.
  • Stir well to ensure the pasta is evenly distributed and submerged in the liquid.

Simmer:

  • Bring the mixture to a simmer, then reduce the heat to maintain a gentle simmer.
  • Cover the skillet and cook for about 15 minutes, or until the pasta is tender. Stir occasionally to prevent sticking.

Add Cheese:

  • Once the pasta is cooked, remove the skillet from the heat.
  • Stir in ¼ cup of the shredded cheddar cheese until melted and evenly mixed.

Garnish and Serve:

  • Sprinkle the remaining ¼ cup of cheddar cheese over the top of the pasta.
  • Cover the skillet for a few minutes to allow the cheese to melt.
  • Once the cheese is melted, sprinkle the thinly sliced scallions over the top for garnish.
