  • Onion 1 medium, sliced

Step 2: Prepare the Chicken

  • Begin by cleaning your chicken pieces. Pat them dry with paper towels.
  • Season both sides of the chicken with salt and pepper. For added flavor, rub minced garlic over the chicken.
  • If you have time, let the chicken marinate for at least 30 minutes in the refrigerator.

Step 3: Prep Your Veggies

  • Wash and slice the bell peppers into strips.
  • Peel and slice the onion.
  • Mince the garlic if you haven't already.

Step 4: Cook the Peppers and Onions

  • Heat a tablespoon of olive oil in a large skillet over medium heat.
  • Add the sliced onions and peppers to the skillet. Sauté for about 5-7 minutes or until they're soft and slightly caramelized. Remove from the skillet and set aside.

Step 5: Cook the Chicken

  • In the same skillet, add another tablespoon of olive oil.
  • Place the chicken pieces in the skillet. Cook for about 5-7 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).

Step 6: Combine Chicken and Veggies

  • Return the cooked peppers and onions to the skillet with the chicken. Stir to combine.
  • If desired, sprinkle chili flakes over the top for a spicy kick.

  • Garnish the dish with fresh herbs like parsley, cilantro, or basil for a burst of color and flavor.
