  • 12 corn tortillas
  • 1 cup shredded cheese cheddar or a Mexican blend
  • 2 tablespoons taco seasoning
  • Oil for frying vegetable, canola, or peanut oil
  • Optional toppings: lettuce tomato, sour cream, guacamole

Step 1: Prepare the Filling

  • Cook the Meat: In a large skillet over medium heat, cook the ground beef until it's browned and crumbly. Drain any excess fat.
  • Season the Meat: Add the taco seasoning to the cooked meat along with 1/4 cup of water. Stir well and simmer for 5 minutes, or until the mixture thickens. Remove from heat.

Step 2: Prepare Tortillas

  • Warm the Tortillas: To make the tortillas pliable and prevent them from breaking when folded, heat them slightly on a skillet, or microwave them for a few seconds.

Step 3: Assemble the Tacos

  • Fill Tortillas: Lay out the warmed tortillas on a clean surface. Spoon the meat mixture onto one half of each tortilla. Sprinkle shredded cheese on top of the meat.
  • Fold Tortillas: Carefully fold the tortillas in half, pressing gently to keep the filling inside.

Step 4: Fry the Tacos

  • Heat the Oil: In a large skillet or frying pan, heat about 1/2 inch of oil over medium heat until it reaches about 350°F (you can test the temperature by inserting the handle of a wooden spoon into the oil; if bubbles form around it, the oil is ready).
  • Fry the Tacos: Place 2-3 tacos in the hot oil, being careful not to overcrowd the pan. Fry each side for about 2-3 minutes or until golden brown and crispy.
  • Drain: Use tongs to remove the tacos from the oil and let them drain on a paper towel-lined plate.
