1. Prepare the Flatbread Dough:
Mix the dry ingredients: In a large bowl, combine the flour and salt.
Add water and oil: Gradually add water and oil to the dry ingredients, mixing until a soft dough forms. Adjust the water as needed.
Knead the dough: On a lightly floured surface, knead the dough until smooth, about 5 minutes.
Rest the dough: Cover the dough with a damp cloth and let it rest for at least 20 minutes.
2. Cook the Flatbreads:
Divide the dough: After resting, divide the dough into 4-6 equal balls.
Roll out the flatbreads: On a lightly floured surface, roll each ball into a thin circle.
Cook: Heat a skillet over medium heat and cook each flatbread until it puffs up and gets golden brown spots on both sides. Set aside.
3. Prepare the Filling:
Sauté onions and garlic: In a large skillet, heat the oil over medium heat. Add the chopped onions and garlic, sautéing until they are soft and golden.
Cook the meat or alternative: Add the ground meat or plant-based alternative to the skillet. Cook until well browned, breaking it into small pieces as it cooks.
Add spices and vegetables: Stir in the diced bell pepper, tomatoes, and all the spices. Cook for another 5-7 minutes until everything is well combined and the vegetables are soft. Adjust salt to taste.
4. Assemble the Tacos:
Prepare the tacos: Take a flatbread, add a generous amount of the filling in the center, and top with your choice of toppings.
Serve: Continue assembling the tacos with the remaining flatbreads and filling. Serve immediately with slices of lemon or lime on the side.
