Generously season both sides of the T-bone steaks with salt and let them sit at room temperature for 45 minutes before cooking. Prepare a rimmed baking sheet with a light coating of cooking spray. Preheat your oven to 350 degrees about 10 minutes before you plan to start cooking.
Heat a cast-iron skillet over high heat and add either butter or oil. Season the steaks with ground black pepper and any other seasonings you prefer, ensuring a flavorful crust. Sear each side of the steaks for 3-5 minutes until they develop a golden-brown sear.
After searing, place the steaks on the prepared baking sheet and position it in the middle rack of the oven. Let them bake for 10-20 minutes, or until a meat thermometer indicates they've reached the desired level of doneness as per the temperature guide.
Once done, move the steaks to a clean plate and loosely cover them with foil to rest for 5-10 minutes, allowing the juices to redistribute. Make sure to check the steak's temperature again before serving to ensure perfection.
