Ingredients
  

Biscuit Base:

  • 250 g about 2 cups of store-bought biscuits (Graham crackers or Digestives)
  • 100 g 1 cup desiccated coconut
  • Zest of 1 lemon
  • 120 g 1/2 cup unsalted butter, melted

Lemon Filling:

  • 395 g 1 can sweetened condensed milk
  • Juice of 2 lemons about 1/4 cup

Lemon Icing:

  • 150 g 1 1/4 cups icing sugar (powdered sugar), sifted
  • Juice of 1 lemon about 2 tablespoons
  • Extra lemon zest or desiccated coconut for decoration optional

Instructions
 

  • Step 1: Prepare the Biscuit Base
  • Begin by crushing the biscuits into fine crumbs. This can be done using a food processor or by placing the biscuits in a ziplock bag and using a rolling pin to crush them.
  • Melt the unsalted butter in a microwave-safe bowl or on the stovetop.
  • In a large mixing bowl, combine the biscuit crumbs with melted butter, desiccated coconut, and the zest of one lemon. Mix well until the ingredients are fully combined and the mixture resembles wet sand.
  • Press the biscuit mixture firmly into the bottom of a lined 8-inch square pan to form the base. Ensure it's compact and even. Place in the refrigerator to set while you prepare the filling.
  • Step 2: Create the Lemon Filling
  • In a separate bowl, combine the sweetened condensed milk with fresh lemon juice (from about two lemons). Whisk together until smooth.
  • Pour this lemon filling over the biscuit base, spreading it evenly.
  • Return the pan to the refrigerator to set. This will take approximately 1-2 hours, but for best results, allow it to set overnight.
  • Step 3: Prepare the Lemon Icing
  • Sift the icing sugar into a medium bowl to remove any lumps.
  • Gradually add lemon juice (from the remaining lemon) to the icing sugar, stirring continuously until you achieve a smooth, spreadable consistency.
  • Once the lemon filling is set, spread the lemon icing over the top. Use a spatula or the back of a spoon to smooth it out.
  • Optionally, sprinkle a little lemon zest or desiccated coconut on top for decoration.
  • Step 4: Chill and Serve
  • Place the lemon slice back into the refrigerator for an additional hour to allow the icing to set.
  • Once set, remove from the pan and cut into squares or bars using a sharp knife. Wipe the knife clean between cuts for neat slices.
  • Store any leftovers in an airtight container in the fridge.
