- 4 large yellow onions thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon sugar optional, for caramelizing onions
- 1 tablespoon fresh thyme chopped
- 2 cloves garlic minced
- 1 cup beef broth or vegetable broth for a vegetarian version
- 1/2 cup dry white wine optional
- Salt and pepper to taste

Caramelize the Onions:
